TirumalaiAs there are not very many books on vegetarian Mexican foods, this is really a good book to have. The one thing I have come to conclude after trying to cook from 'regular' cookbooks; is that substituting Tofu for the meat is never a good idea. The meat in a dish not only adds protein but also adds enormous amounts of flavor. So any recipe that simply substitutes the meat with another vegetable protein is never going to taste right.This book, written by a vegetarian restaurateur, is a much needed respite from badly written books. This is based on what she serves to customers and the recipes clearly are flavored right. I recently read Barb Stuckey's book on Taste and it has changed my cooking completely. I think we vegetarians undersell umami. I have learned how to cook my food so they are all umami bombs. I have only tried 3 recipes from this book. A bean soup, a taco filling using squash blossoms and a mushroom based taco filling. All of them turned out GREAT!I threw out my other Mexican cookbooks as they were 90% meat dishes. (Rick Bayless and Marge Poore if anyone is wondering). I now only have 2 books (out of 20) that have meat recipes. I realized that those other meat cookbooks, that I gave away, were essentially useless for me. I was not using them at all. Now I have books that I actually use. Although this is not my go to book all the time, when I am in the mood for Mexican, I am glad I have this.6 of 6 people found the following review helpful.A journey into the heart and soul of Mexican cookingBy John WalzerThe best regional cookbooks aren't just a compilation of recipes; they carry you into the region, illuminating culture through cuisine. Kippy Nigh's A Taste of Mexico does just that: it carries you into the heart of Mexico, especially the author's adopted Chiapas, introducing the reader to a broader experience of foods and flavors than what most Americans think of as "Mexican food." The descriptive lists of ingredients, especially chilis, are very helpful. Because I have the good fortune to live in San Cristóbal de Las Casas, I am able to find some of the local plants and herbs the cookbook mentions: romeritos, chipilin, mumo, etc. Otherwise, I would have no idea what those big piles of greenery were in the market!A number of the recipes are high-fat, using eggs, cheese, sour cream, etc. Vegans may find surprisingly little to work with.The book loses a star because of the errors in the recipes. As a long-time vegetarian, I have several cookbooks from the publisher, Book Publishing Co., and they are all riddled with errors. Evidently they get by without a copy editor or recipe tester. For example, the recipe for "Chayotes Stuffed with Cheese" says, "Heat the oil in a large skillet. Beat the egg yolks and add the flour..." but neither oil nor egg yolks nor flour is mentioned in the ingredients list, and after heating the oil, no direction is given for what to do with it. The recipe for "Mexican Quiche" is clearly intended as a double recipe--the laws of physics don't allow a quart of milk, six eggs, plus cheese, plus filling, to fit inside a single pie shell--but is written for a single pie. And so on...If you can get past the errors, this cookbook is a "must" for those who love Mexican food.0 of 0 people found the following review helpful.Great cookbook!By nyala's momIf your looking for Vegetarian Mexican cuisine beyond your typical bean burrito, cheese enchiladas, and corn tamales this is a great book to have. The recipes are packed with flavor and most of them are very easy to make. although many are lower in fat than what you would get in a typical mexican restaurant, they are hardly low fat, low cholesterol ( the healthy world cuisine part). It all relative as to what you consider to be healthy( each recipe gives you the calorie, protein fat count so you can decide for yourself.) In any case many recipes are easily convertable to low fat low cholesterol, without losing any of the flavor. Bon Appetit!See all 25 customer reviews...
